Collards, Catfish and Red Punch

Restaurateur, caterer and cookbook creator Melba Wilson, of the famed New York Metropolis restaurant Melba’s, is stopping by the TODAY kitchen to have fun Juneteenth. To commemorate the vacation, she is cooking up a collard greens salad topped with country-fried catfish paired with a festive purple punch.

Juneteenth was acknowledged as a federal vacation in 2021 by President Biden, however my household celebrated it for a few years prior. We then referred to as it Freedom or Jubilee Day and celebrated yearly on June 19, paying homage to the of finish of slavery within the U.S.

This recipe evokes emotions of nostalgia and jogs my memory of household gatherings. There’s a mixture of cultural connection and scrumptious flavors on this dish. It is a celebration of the need to acknowledge and honor the historical past and traditions of African People and our African ancestry.
